The market was a big surprise for me. The quality of the ingredients was extraordinary, especially for the fish and vegetable side. A chef can only be happy in the level of freshness and quality that I saw.
You can also see that everything is outside with very little refrigeration and everything look so fresh... Wondering why? Well it's easy to understand, the market is full of people that buy and the product don't stay long on the shelves. Sound so simple no… :)
